If you care even the tiniest bit about the future of the human race, you have been
dutifully eating peanut butter and jelly for lunch every day like me. And, if you are anything like me, the thought of another peanut butter and jelly sandwich makes you want to punch a polar bear cub right in the fucking face.
Well, good news, polar bear cubs! I don't have to eat PB&J everyday, and neither do you. The point is that there is anything special or magical about PB&J, but rather that you just avoid eating meat. So any vegetarian meal will do. This week I made curried lentils and vegetables, aka liberal douchebag meal that manages to be enviro-conscious and ethnically diverse at the same time. Enjoy!
Ingredients:
- 1 cup of dry lentils
- 3 cups of water
- 1 16oz can of tomatoes
- 1/2 cup chopped onion
- 1/2 cup chopped green pepper
- 1 cup chopped PO-TAY-TOES
- 1 tsp curry powder
- 1 tsp cumin
- 1 tsp ginger
- 1/4 tsp cayenne pepper
- 3 minced garlic cloves (or just throw some minced garlic in their out of a jar, whatev)
- salt and pepper to taste
This recipe has two steps. Blink and you miss it. Step 1: Combine the lentils and water in a pot, and bring to a boil.
Step 2: Add in the rest of the shit. Just dump it in. Cover and simmer for 45 minutes, stirring occasionally.
